In the 1940s, U.S. farmers and butchers found the brisket on a cow hard to sell and preserve. So, one Sunday after the farmers came to town with their beef, butchers would cook it. These butchers cooked the brisket at low temperatures for a long time over a pit. This made the meat tender for eating and selling. Southerners across the U.S. have been smoking brisket ever since!
